Sangak was the traditional bread of the Persian army. Each soldier carried a small ksuntaft of pebbles, which were brought together at camp with the “Sangak oven” and formed to cook the bread for the entire army. It was consumed along with lamb kebab. Over the years, Sangak has become an extremely popular bread. Unfortunately, it has only been available in select cities. The quaint and earthy design elements are reminiscent of your grandmother’s kitchen on the farm, incorporating contemporary counters and wall furnishings, with blackboards and Persian accents. The exposed kitchen and natural charcoal grills will showcase the staff cooking lamb kebabs on traditional sword-shaped skewers. Rustic wooden, concrete floors, and a combination of vintage and traditional lights will further enhance the authentic feel with open, airy space.
This contemporary, grab-and-go bakery/restaurant will introduce the ancient bread called Sangak in a new and modern way. We will bake all bread on premises and our Sangak wraps will be filled with grilled lamb skewers, hummus, confit peppers and turnip slaw. In addition, traditional Mediterranean salads, hummus, baba ghanouj, and dips will be served on site or for takeaway. In addition to the Sangak breads and wraps, there will be traditional “boloni” filled with mushrooms, potato, and spices wrapped in a thin pasty, sautéed to a crisp, and served with garlic yogurt.
Traditional yogurt drinks, juices, and sodas will be available, including wine and beer. Special homemade iced teas will be brewed and blend-in smoothies will be made on premises.
This is a self-serve concept, with order and pick up at the counter. There will also be grab-and-go and catering options.
TABLE AND ROOM THEME:
A blend of rustic and contemporary furniture with a minimalist designs will complement Persian and Mediterranean elements. Wooden boards and brown carton logoed boxes and butcher paper will be used. We will also use recyclable and environmentally friendly takeout boxes with unique packaging and trademarked retail items.
