This multi concept bakery, cooking school, and farm-to-table restaurant is the first “community restaurant” concept. Over the past decade, Americans have been more tuned in through media, social media, and organized movements focusing on healthy diets, organic foods, and the benefits of farm-to-table restaurants as well as sustainable and environmental care for the planet. We will emphasize the importance of educating our children by exposing them to farming and the important benefits of vegetables. Brasserie Local’s objective is to become the first “community restaurant” that provides family dining at affordable prices, while educating the community (particularly children) through on premise vegetable and herb gardens. We will teach them cooking and baking techniques at the restaurant in a specially designed cooking school catered to children.
The restaurant will have a contemporary farm-to-table design and a mixture of vintage elements and modern accessories. The bakery will be encased in a glass partition from restaurant and sidewalk so patrons can see the baking process. An open kitchen and grill area will add to the atmosphere. Sustainable equipment and processes will be incorporated into the restaurant design, including black and white family pictures in rustic wooden frames on a variety of brick, stone, and concrete walls. With wooden floors, vaulted industrial ceilings, finishings, and a fireplace, patrons will enjoy a warm, inviting, and organic feel in this casual and cause-worthy brasserie.
There will be breakfast, lunch, and dinner menus featuring daily baked breads and pastries from our bakery including homemade jams, chutneys, and sauces. The cuisine will be a mixture of Italian, French, American, and South American favorites, sandwiches, burgers, seafood, steaks, large salads, and vegetables from our own garden. Healthy lunch items and signature dishes will be prepared from our local farm produce and ingredients with a focus on organic, sustainable, high quality ingredients. Favorite American desserts will be on the menu, including ice cream, sorbet, and classic pies.
Organic drinks and cocktails will be offered, including IPA craft beers, and locally grown and imported wines from all around the world as well as champagnes. Signature coffees, teas, and homemade iced teas and lemonade will also be available.
Bakery will be counter service to dine on our patio or bakery bar counter and coffee bar. The restaurant will be full service with waiters, sommelier, and kitchen runners.
TABLE AND ROOM THEME:
The design will feature contemporary furniture with vintage elements such as burlap-covered couches and pillows. There will be communal tables with wooden frames and cabinets filled with china and pottery. Classic cast iron skillets, platters, granite slates, and large river stones will be used to serve appetizers and rustic wooden trays will be used to serve pizzas. Vintage mason jars will be used as glassware and Riedel wine glasses along with custom built seafood towers.
